MASALA OMELETTE

 

This masala omelette with a little spice,  is great for a lazy brunch or in-fact for any meal at any time of the day. Full of fresh ingredients but don’t worry if you don’t have all them, use what you have.

Suggestions that could be added;- peppers, sweetcorn, peas, other herbs like chives, basil or parsley, grated carrot, grated radish, diced celery are just some that come to mind.

 

Ingredients (Serves 2)
  • 5 medium eggs
  • 2 spring onions
  • 30 g spinach
  • 1/4 green chilli (optional)
  • 1 tomato
  • 30g grated cheese (optional)
  • 1/4 teaspoon of paprika
  • salt and pepper
  • a handful of fresh coriander
  • For cooking the omelette – 1 tbsp vegetable oil or rapeseed oil

Preparation

  • Slice the spring onions
  • Dice the tomatoes
  • Finely chop the chilli (optional)
  • Roughly wash and chop the spinach
  • Roughly wash and chop the coriander
  • Grate the cheese (optional)
  • Turn the grill on
Method
  1. Place eggs in a large mixing bowl and beat with a fork
  2. Add all the ingredients to the beaten egg, holding back half the cheese
  3. Season with salt and pepper and give it a stir
  4. Heat the oil in a frying pan on a medium heat
  5. Pour half the egg mixture into the frying pan and turn the heat down, let cook for 3-4 minutes
  6. When you can see the base has been cooked but the top remains runny, place the frying pan under the grill for 3 minutes
  7. Once the omelette has fluffed up, take out from under the grill

[BE CAREFUL TO USE OVEN GLOVES AS THE HANDLE WILL BE SCORCHING HOT]

  1. Sprinkle with the remainder of the grated cheese on the omelette and serve
